This is me, The Rat...partner since 2001 to Concrete_Man, mum to Rat_Girl (born 13.12.05) and Rat_Boy (born 14.05.09). Co-inhabiting our nest are 2 rather large fury 4 legged rats, Boxer_Dog and Black_Dog. We run a business from the nest with Concrete_Man doing the manly physical work while I stay at home and do the 'other' stuff. This means we are often busy, often stressed and often very tired...but then again who isn't! Anyway that's enough for now. As time goes by you will learn a bit more about the family that is "MummaRat's Nest"

Kids Cooking - Mini Sausage Rolls

Mini Sausage Rolls
This mixture made about 20 or so.  We cooked 4 and froze the rest prior to cooking, to be cooked at a later date.  They are also a perfect size for lunches boxes and can be eaten cold.

What you need
500g beef mince
2 slices wholemeal bread, soaked in warm water
zuchini, grated
carrot, grated
1 tablesoon chutney (I used tomato, roasted capsicum & onion chutney)
Frozen Puff pastry, partial thawed (we used I think 4 sheets all up)
Milk to brush on pastry

NOTE: you can add any extra vegies you want if you can grate or process them nice and small.  Concrete_man loved these but requeste a little garlic and pepper to be added.

What you do

Squeeze the excess liquid from your bread and vegies, and add to mince, throw in your chutney


And give it a good mix (squeeeeeeeeze) with your hands

Cut a sheet of pastry in half, shape your mince and brush edge with a litte milk, roll up the pastry


Cut in thirds and lay on try edge side down, brush with a little milk, sprinkle with poppy seeds if you like


 

Don't forget to clean up your mess


 

Bake at about 180 until cooked through and pastry is puffed and golden.


Another variation of this could be to thinly cover your whole pastry sheet with mince mixture, leaving room at the edges and roll up and slice up to create little pinwheels.

Kids Cooking Thursday - Quiche


Shout out to Susan at Dragons Musings for this recipe!  Really was a hit, I did have to make some changes working around what I had in the fridge.

Mallee quiche


4 eggs
125g grated cheese
125g chopped bacon (I used ham)
1 onion, finely chopped
1/2 cup S.R. flour (wholemeal, it's all I had)
1 1/2 cups milk
1 tblspn chopped parsley or 1 tspn dried

I also added some extra vegies - carrot, zucchini, broccoli, snow peas, capsicum, red onion, and some mushrooms
Chopping up all the veiges, I actually threw all of these in the fry pan with the ham and onion
Whisk up the eggs (remove the shell first :-) )
Throw everything else in and mix together
Them bake until set....and presto, delisho!
Rat_girls first serve.  She went back for seconds and had it for lunch the next day at kindy.  Rat_boy also polished off a similar size portion

Kids Cooking Thursday - Banana & Blueberry Bread (well cake)

Banana and Blueberry bread

adapted from this recipe

Ingredients
265g (1 3/4 cups) self-raising flour ( I used wholemeal)
40g (1/4 cup) plain flour (wholemeal)
1 tsp ground cinnamon
140g (2/3 cup, firmly packed) brown sugar
125ml (1/2 cup) skim milk (I used oat milk, it was all I had!)
2 eggs, lightly whisked
50g butter, melted, cooled
2 overripe medium bananas, mashed ( we had 3)
Blueberries...couldn't even tell you how many I used just threw them in.
 
Sift the flours and cinnamon
lightly whisk the eggs
mash the bananas
mix together the bananas, eggs, milk and melted butter (eeeeeewwww says Rat_girl)
Add the sugar to the flour, make a well in the middle and mix in the wet ingredients
then throw in the bluberries and fold through
Bake for about 45mins, cool in tin for a little before turning out. 
I've never made banana bread before and I'm not cook at making cakes etc from scratch.  This was yummy!!! It was cut up and frozen and put into lunch boxes.

Kids Cooking Thursday - Hamburgers and Porcupine Balls


This week is all about freezing meals and being prepared.

We mixed up some mince and made hamburgers and porcupine balls to be stored in the freezer to be eaten down the track.

Ingredient


Meatballs:
500gr mince
½ cup breadcrumbs
½ cup raw rice ( I only have brown rice)
1 large onion, finely chopped
1 clove garlic, finely chopped
1 egg
1 tbsp dried mixed herbs (or fresh if you have them) – I use basil, oregano
1 tbsp tomato sauce

Sauce:
Worcestershire sauce
Salt & pepper
Large can tomato soup and ½ can water

Couldn't be easier, throw everything in together
Give it a good mix (squeeeeeeeeze) with your hands
And roll into balls. We've stored ours in the freezer until we're ready to eat.
I promise to add a finished product photo when I make them.

Hamburgers
I don't have a recipe for these, I use similar ingredients as above but I add some veiges chopped up finely and thrown in.

And same as before throw everything together and squeeeeeeeeze!!!

Ours are then pressed into my hamburger keeper
And stored in the freezer until we're ready
Again I promise finished product photos later on.

I thought this was a good exercise to do with Rat_girl...we done the same with some cookies and cookie dough.  I'll have that post coming up soon.

Kids Cooking Thursday 22/10/09

In this post we have some old photos of Rat_girls cooking, my Virtual Girls Night In submission and down the bottom my first Kids Cooking Thursday entry YAY.

We died the inside pink also as she didn't believe dipping in the jelly would make the cake pink...they were very pink.

We used a very cheap vanilla cake mix, raspberry jelly made to the packet directions with just a touch less water and partly set in the fridge (till it's nice and thick and just starting to set).
Once cakes were cooled and jelly ready we dipped cake in jelly and gave a good coating then rolled in coconut.  Left put in fridge to set then cut off the tops and put a dollop of double cream MMMMMM

They looked nothing like the picture in the end but boy did Rat_girl have some fun.  When she saw that some of the biscuits were pink she decided she wanted pink and purple but also the brown.  So that's what we did!

Kids Cooking Thursday

I'm just quickly putting it out there now as it's something I really really want to get involved in.  Thursday is my day at home with the kids so it's perfect.

The only problem is I have only a small amount of patience...but I guess this good be a good exercise for me!

Last night Rat_girl helped with making pizzas and made her own star shaped ones with only the toppings she wanted and today we've started making some 'pink' food and she helped.  I let her have a bit more freedom and make as much mess as she needed.  The only stressful part is that she doesn't listen and we tend to lose whole batches of things or she comes very close to getting hurt.

Little by little, maybe the more often we do it the more she will learn.

Now to just keep an eye out for what we can make, I don't want to always to cakes and stuff would be good if we can make somethings that she can put in her lunchbox at kindy and tell her teacher she made it!!!
